The dishes of the Val di Bisenzio are typical mountain fare, with chestnuts, mushrooms, potatoes and cheese as some of the key ingredients. Since, traditionally, there were few ingredients available, locals used their creativity to create an almost endless variety of dishes which were simple, but light and flavourful.
Of course today the variety of products has broadened, but locals are still loyal to the traditional recipes that take them through the year, changing with each season with special dishes associated with each of the religious and agricultural festivals.
