This dish can be found in and around the Tuscan town of Massa Carrara.
Recipe for 4 people:
100g softened salt cod, flour, oil, chilli, salt, 1kg beet or wild romice, tomato (optional) and marjoram.
Chop the salt cod and coat the pieces with flour. Fry them in hot oil. Pour some oil in a terracotta casserole dish, add some water, then some wine and finally the floured and fried salt cod. Let it simmer and let the liquid reduce. Finally, add the pre-steamed greens. Allow to boil for a few minutes and serve.
