Camaiore lard is a traditional salami which is very popular with food-lovers. It’s white with pink veins running through it and comes from the fatty part of the pig’s back. The lard is covered with a generous layer of salt, pepper, garlic and rosemary and left to cure on marble blocks. These blocks are kept at a slight angle during the short curing process. It is usually enjoyed finely sliced on toasted or fresh bread, or to add flavour to soups and stews.
