Founded in 1938 by Mr. Ravaioli, the shop experienced a boom during the war years, quickly becoming a city-wide legend. When cream and other ingredients became scarce Ravaioli and his wife, Maria, invented a series of ‘Spumoni’—chilled desserts made with egg whites and apple cream. After surviving the terrible flood the ravaged the city in 1966, the company was bought by two ex-musicians and their families in the 1990s. Since then, they have worked to safeguard home-made ice-cream as one of the highlights of local cuisine.
